This recipe is quick, requires no cooking (aside from the peanuts), and is perfect for a light, tangy, and protein-packed snack.

Ingredients

 

Ingredient Quantity Notes
Boiled Peanuts 1 cup Make sure they are soft and shelled.
Red Onion 1/4 cup Finely chopped.
Tomato 1/4 cup Finely chopped, seeds removed (optional, but prevents sogginess).
Cucumber 1/4 cup Finely chopped, adds a nice crunch.
Green Chili 1/2 tsp Finely chopped, adjust to your spice preference.
Fresh Cilantro (Coriander) 2 tbsp Finely chopped.
Lemon Juice 1 tsp Freshly squeezed, for tanginess.
Chaat Masala 1 tsp The star spice! Add more to taste.
Salt To taste Use sparingly, as chaat masala already contains salt.

Instructions

  1. Prep the Peanuts: Ensure your boiled peanuts are at room temperature and drained well.

  2. Combine Vegetables: In a medium bowl, mix together the chopped onion, tomato, cucumber, green chili, and fresh cilantro.

  3. Add Peanuts: Add the boiled peanuts to the bowl with the vegetables.

  4. Spice and Season: Sprinkle the chaat masala and a pinch of salt over the mixture.

  5. Add Tang: Squeeze the lemon juice over all the ingredients.

  6. Toss and Serve: Gently toss everything together until the vegetables and peanuts are evenly coated with the spices and lemon juice.

  7. Enjoy! Serve immediately for the best texture and flavor.

Chef's Tip:

For an extra layer of flavor and crunch, you can add a handful of sev (crispy chickpea noodles) or a few crushed papadis (fried small wheat crisps) right before serving!
